Frozen Chocolate Covered Banana Bites

Recipes don’t get any easier than this! I'm always on the hunt for simple and easy treats to add to my dessert list. When you are raising a family, easy is a necessity! These banana bites are wholesome treats, that are a perfect, easy after-dinner treat when you’re craving something sweet. Pretty good any time of the year, these bites help you close the day, feeling satisfied. Give them a try!




 

Ingredients

  • 3 bananas (firm & ripe)

  • 1/2 cup any nut butter

  • 1/4 cup cashew flour

  • 2 Hershey bars

  • 2 tsp coconut oil


Directions

  1. Cut bananas into 1/4 inch slices & arrange in pairs on parchment paper.

  2. Mix nut butter with cashew flour, then scoop 1/4 heaping teaspoon onto 1 of the banana slices, then assemble with the other banana slice.

  3. Place banana bites on parchment paper. When all are assembled, place in freezer for 1 hour.

  4. Prepare the chocolate just before you take bananas out of freezer.

  5. Put chocolate in a microwave-safe, shallow bowl along with the coconut oil (it helps the chocolate melt and stay smooth). Microwave on low/medium heat in 30 seconds intervals, stirring in between each, until chocolate is fully melted and glossy (watch carefully so the chocolate doesn't burn). 

  6. Prepare another baking sheet (or a plate) with parchment paper & take banana bites out of the freezer.

  7. One by one, dip them in the melted chocolate, then sprinkle with Himalayan salt.

  8. Place the chocolate covered bites back in the freezer for 10 minutes.


Take them out & enjoy!


Transfer any remaining in a container. Store in the freezer.
